Sustainable “Glamping”

My daughter and I recently took a trip to Valle de Guadalupe’s Hotel Endemico, a gorgeous eco-friendly hotel made up of individual cabins perched on a mountainside. Just a quick two hour jaunt from San Diego, the Valley offers beautiful vineyards as well as incredible cuisine which we sampled with a 9 course meal at Corazon del Tierra featuring geoduck clams, nopales and at least three dessert courses.  We spent our evening sipping locally made wine on our terrace cozying up next to the chiminea on our mini deck and thinking about how perfectly simple this “glamorous camping” was.  We left with a couple of bottles of wine from our favorite vineyard (tip: you’re allowed up to two bottles per person over the border) and dreams of returning.
